A Legacy of Gastronomy

The Confrérie de la Chaîne des Rôtisseurs is the world's oldest and largest international gastronomic society. Founded in Paris in 1248 as a guild of goose roasters, the Chaîne was granted a royal charter by King Louis IX of France, establishing the standards that would define culinary excellence for centuries.

Disbanded during the French Revolution in 1793, the Chaîne was revived in 1950 by Dr. Auguste Bécart and a group of dedicated gastronomes. Today, the society spans over 80 countries with more than 25,000 members — from professional chefs and sommeliers to passionate food and wine enthusiasts. The modern Chaîne encompasses two branches: the Ordre Mondial des Gourmets Dégustateurs, devoted to gastronomy, and the Société Mondiale du Vin, dedicated to the art of wine.

For over 60 years, the Bailliage de Buffalo has brought together discerning food and wine enthusiasts from across Western New York. Our chapter is dedicated to celebrating the culinary arts, supporting local chefs and restaurants, and nurturing the next generation of culinary talent through our scholarship program.

Throughout the year, we host intimate dinners at the region's finest restaurants, wine tastings featuring exceptional vintages, and special events that bring together our professional and non-professional members in the spirit of fellowship and shared appreciation for the table.
