The Chaîne is Born

King Louis IX of France grants a royal charter to the guild of goose roasters in Paris, establishing the Confrérie de la Chaîne des Rôtisseurs.

1950

Revival

Dr. Auguste Bécart and fellow gastronomes revive the Chaîne des Rôtisseurs in Paris, bringing the centuries-old tradition into the modern era.

1964

Buffalo Bailliage Founded

The Bailliage de Buffalo is established, bringing the traditions of the Chaîne to Western New York's growing culinary community.

1970s–80s

Growth & Tradition

The Buffalo chapter grows, hosting regular dinners at the region's finest restaurants and establishing a tradition of culinary excellence.

1990s

Scholarship Program

The Buffalo Bailliage launches its culinary scholarship program, supporting aspiring chefs at local culinary institutions.
